These easy breakfast wraps take less than a half hour to make.
And by less than a half hour, I mean like 15-20 minutes.
If you can scramble an egg, you will kill this recipe.
When you’re ready to eat a wrap one, you drop it in the microwave in their handy paper towel wrapping for about 2 minutes. Because they freeze really well, you never have to worry about them going bad if you’re flying out the door and forget to grab one.
They’re like a homemade Hot Pocket. But better. And way healthier.
This is the one thing that’s gotten me to eat breakfast regularly.
It also gets me at least one serving of vegetables even before I’ve walked out of the door and sets me up for a strong rest of the day.
Here’s what you do:
Super Simple Breakfast Wraps
Ingredients
- 5 eggs
- 5 slices cheese, any kind havarti is my favorite, it melts really well in this
- 1 bag baby spinach
- 6 6” tortilla wraps, whole wheat are best but any will do
- Some oil spray
Instructions

Give a large frying pan a good spray with the oil. Wilt the spinach in a pan.

Add the eggs and scramble until done. Add some salt, pepper and any other seasonings you like to taste.

Allow eggs and spinach to cool in the pan for about 5 minutes, this makes sure your wrap doesn’t get soggy.

Place a slice of cheese on a tortilla, then layer a fifth of the eggs on top of the cheese.

Wrap in a paper towel and repeat with remaining wraps, cheese and eggs. Refrigerate for a week. Freeze for a month.

When you're ready to eat, drop it into the microwave on high for about 1 minute. Eat and enjoy!
Don’t let the eggs or cheese or spinach turn you off. The combinations are endless.
Some other breakfast wrap combos to try:
- Scrambled tofu instead of eggs
- Beans and cheese
- Turkey bacon, lettuce and tomato
- Avocado, tomato and cheese
I’ve done this same thing with at least 20 other things lying around in my fridge. Whatever you’ve got, is what you should use.
