Where’s the EASY meal prep?
Can we be honest for a minute? The internet is full of meal prep plans that are not for people who have no time to meal prep. I can’t tell you how many times I’ve looked at meal prep posts and have been blown away. Beautiful pictures of perfect meals in their neat containers. Stored in a neat fridge.
Piece of cake, they say. It’s fast, they say.
That prep can be an entire Sunday gone. Or at least half gone. Washing foods, chopping, cooking. Cleaning up. And don’t forget about shopping in the first place. The groceries for those meals aren’t going to buy themselves!
Then (if you’re anything like me) you forget to bring that amazing meal in its neat Tupperware container when you blow out of the house 10 minutes later than you were supposed to leave.
That’s probably the worst meal prep related emotion. You’ve done the work, you’ve committed to meal prepping and bringing lunch for the week. It’s ready and waiting to go. And then you forget to pack it.
Or you have after work plans and your Tupperware doesn’t exactly go with the outfit.
The meal prep struggle is real.
So what do you do if you know you need to step your healthy eating game up, but you’re not quite at that cook for the whole entire week point in your life?
You start with one thing.
THE ABSOLUTE EASIEST PLACE TO START MEAL PREPPING IS NOT LUNCH – IT’S BREAKFAST
It’s the fastest to make and takes the least amount of ingredients. Do it right and it will keep in the freezer for a month and will take NO Tupperware.
Eating breakfast is also good for you.
Studies have shown that people who eat breakfast are more likely to lose weight and maintain their weight.
Why is this true? It’s a 2 part reasoning.
First, you’ll be less hungry by the time lunch rolls around. Since you’re not starving when noon hits, you’re then less likely to inhale some easy to find junk food just to kill that hunger.
Second, if you start your day with something healthy, you’re more likely to want to keep it up and choose something healthy next time you eat.
This idea works the other way around also. If you start your day with a doughnut, you’re less likely to eat a salad by the time lunch hits.
There are as many ways to meal prep breakfast as there are breakfasts you can think of. Some of the easiest are overnight oats (which do take a container and aren’t the most portable), and breakfast burritos.
This is my go-to recipe for super simple breakfast wraps.
Breakfast wraps win every single time. They take about 15 minutes to make, freeze perfectly and are extremely potable. I usually make mine, wrap each in a paper towel, and store a heap of them together in the freezer. They microwave equally well as they heat in the oven.
When I’m sprinting out the door in the morning, I can grab and go. If I forget one day, there’s no worry it’s going to go bad.
Meal prep win-win.
