Cream cheese frosting is good.
An old standby that always comes through in the clutch. I love it on red velvet cake. I love it on spoon.
What makes it even better is when it’s spread all over banana bread. There’s something just so comforting about that combination.
Carrot cake gets all the attention but this ridiculously easy 15 minute banana bread should get the love it deserves. It’s good alone, but it’s even better with cream cheese frosting.
But it can win AWARDS when you make it into pumpkin spice cream cheese frosting and put it on top of banana PUMPKIN bread.
I know that’s a lot to handle, so just let it sink in for a sec. Pumpkin spice cream cheese. On top of banana pumpkin muffins. It sounds like fall turned into breakfast. It taste like that, too.
But wait, there’s more!
What if I told you that spreading all this creamy goodness over a warm muffin was actually GOOD for you? Right?! I know! Now I’m just talking crazy. But go with me here for a minute.
This banana pumpkin bread is made with oat bran, which is fiber on top of fiber and one of the healthiest complex carbs you should always have in your kitchen.
All this means is the pumpkin (fiber, beta-carotene and potassium) + bananas (fiber, potassium and B-vitamins) + oat bran (fiber, omega-3s) is going to bake up perfect for breakfast and begging for something creamy and rich to set it off.
It’s like a MUCH healthier version of bagels and cream cheese. Maybe even better.
Ok no more chit chat. Let’s make some frosting!
