It’s so easy to make and so healthy for you, it almost doesn’t make sense how good it tastes.
It’s also incredibly easy to make the vegan version, which is the version I recommend 100% of the time. The applesauce replaces the eggs and complements the bananas while ALSO keeping the whole thing SOOOO moist. But on the off chance you’d rather use eggs, the option is always there.
It took me a while of playing around, but once I found the magic combination of ingredients, it’s been a breakfast staple at least once a month.
Eat a loaf, freeze a loaf is always how I do it.
Sometimes it’s a dessert staple with a scoop of ice cream and a handful (ok bag) of chocolate chips thrown into the baking mix.
I’ve even taken those “muffins” and repackaged them into “cupcakes” with some cream cheese frosting on top.
Whichever way you want to play it, this banana bread is going to go the distance for you.

Banana Bread
This is the only banana bread recipe you're ever going to need. Slice a loaf up for super fast breakfast with some peanut butter on top, bake into muffins and freeze for a snack in a pinch, make into cupcakes with a swirl of cream cheese frosting on top for a birthday party that no one will regret. Added bonus! They're easy to make vegan, they're crazy healthy and taste better than any other recipe out there. I promise. You'll never go back.
Ingredients
- 2 cups All-purpose flour drop this down to just over 1 3/4 cup if using whole wheat flour
- 3/4 tsp Baking soda
- 1/4 tsp Salt
- 3/4 cup Sugar
- 1 tbsp Cinnamon
- 1 pinch Nutmeg
- 5 very ripe Bananas, mashed
- 1/2 cup Applesauce + 1/2 tsp baking powder OR 2 eggs, lightly beaten
- 1/2 cup Yogurt non-dairy kinds work just fine
- 6 tbsp Olive oil
- 2 tsp Vanilla extract
Instructions

Preheat oven to 350 degree F

Combine flour, sugar, baking soda, salt and spices in a small bowl and set aside.

In a large bowl, combine: bananas, applesauce (OR eggs), yogurt and vanilla.

Add the olive oil to the banana mixture and mix well.

Add the dry ingredients to the banana mixture. Mix lightly until everything is just combined. Lumps are OK.

Bake for 40-55 minutes, or until a knife comes out clean.

Slice, freeze or frost as desired. And then EAT!
Recipe Notes
This recipe is so versatile and it takes almost no effort to fancify it in any way you want.
I've added chocolate chips, coconut slivers, walnuts, almonds, pecans.
Instead of the cheese cake frosting on the cupcakes, you could add a cheese cake swirl to a loaf.
I've added an oatmeal and brown sugar crumble to the top.
